3/4 Cup warm milk
2 1/4 Activate dry yeast
2 Eggs
3 1/4 plain flour
2 Tbsp Granulated sugar
1 Tsp Kosher salt
4 Tbsp Unsalted butter (55g) at room temperature
FOR THE FILLING
1 Tbsp Cinnamon powder
6 Tbsp softened butter
1/4 cup brown sugar
FOR THE FROST/GLAZE
1/4 (30g) Icing sugar
1/2 (115g) Creme fraiche
1 Tsp Vanilla extract
Directions
- Activate Yeast:
Pour warm milk into a bowl, add active dried yeast, and mix. Let it sit for 10 minutes to activate. - Make the Dough:
Add 2 eggs, sifted plain flour, sugar, salt, and softened butter to the bowl. Mix until dough forms.
Transfer to a floured surface and knead for 3 minutes. Put it back in the bowl, cover, and let rise for 1 hour. - Cinnamon Filling:
In a small bowl, mix softened butter, brown sugar, cinnamon, and a pinch of salt. Set aside. - Shape Rolls:
Roll out the dough into a funny-shaped rectangle on a floured surface. Spread the cinnamon filling evenly, then roll it up.
Cut into 8 parts, place on a baking tray, cover, and let it rise for 30 minutes. - Bake & Glaze:
Brush with egg wash, then bake at 180°C for 25-30 minutes until golden brown.
Whisk together crème fraîche, icing sugar, and vanilla. Rub over the rolls while they’re still hot!
