Ingredients

  • PICTURE 35 B

  • 3/4 Cup warm milk

  • 2 1/4 Activate dry yeast

  • 2 Eggs

  • 3 1/4 plain flour

  • 2 Tbsp Granulated sugar

  • 1 Tsp Kosher salt

  • 4 Tbsp Unsalted butter (55g) at room temperature

  • FOR THE FILLING

  • 1 Tbsp Cinnamon powder

  • 6 Tbsp softened butter

  • 1/4 cup brown sugar

  • FOR THE FROST/GLAZE

  • 1/4 (30g) Icing sugar

  • 1/2 (115g) Creme fraiche

  • 1 Tsp Vanilla extract

Directions

  • Activate Yeast:
    Pour warm milk into a bowl, add active dried yeast, and mix. Let it sit for 10 minutes to activate.
  • Make the Dough:
    Add 2 eggs, sifted plain flour, sugar, salt, and softened butter to the bowl. Mix until dough forms.
    Transfer to a floured surface and knead for 3 minutes. Put it back in the bowl, cover, and let rise for 1 hour.
  • Cinnamon Filling:
    In a small bowl, mix softened butter, brown sugar, cinnamon, and a pinch of salt. Set aside.
  • Shape Rolls:
    Roll out the dough into a funny-shaped rectangle on a floured surface. Spread the cinnamon filling evenly, then roll it up.
    Cut into 8 parts, place on a baking tray, cover, and let it rise for 30 minutes.
  • ⁠Bake & Glaze:
    Brush with egg wash, then bake at 180°C for 25-30 minutes until golden brown.
    Whisk together crème fraîche, icing sugar, and vanilla. Rub over the rolls while they’re still hot!
